Our precious blend is the result of a careful selection: 50% Casaliva, 40% Leccino, and 10% Pendolino. This varietal composition is the secret behind an oil that captures the authenticity of the Garda region, where olives are harvested using the traditional hand-picking method and milled within 12 hours of harvesting.
The extraction process employs a continuous cycle system, using a two-phase centrifugation with a decanter, followed by a light cardboard filtration. The result is an oil with a unique character and “light fruity” characteristics.
On the nose, the oil reveals a fruity aroma with notes of artichoke, contributed by the Leccino, and almond, thanks to the Casaliva. On the palate, an initial sweetness blends with a light bitterness, culminating in a peppery finish, attributable to the predominant presence of Casaliva olives in the blend.
